Wilde Rice salad

Great pre-gym workout dish, high in protein and energy.



  • Cook rice as per instructions (c. 30 mins)
    • Leave rice to cool a bit when ready
  • Dressing
    • Add ingredients to a glass jar and shake vigorously to mix
  • Add remaining salad ingredients to a large mixing bowl, add rice and dressing
  • Mix together
  • 200g wild rice cooked
  • 1 small red onion diced
  • 1 red pepper, de-seeded and diced
  • 1 small can sweet corn
  • 2 spring onions chopped
  • 1/2 courgette finely chopped
  • Dressing
    • 2 tablespoons EVOO
    • 1 garlic clove crushed
    • juice of half lemon
    • salt and pepper to season

Wilde tips

  • Prepare a large batch of wild rice evening before, store in fridge for 3-4 days adding to dishes
  • Top with toasted nuts (almond flakes/ pine nuts)
  • Sprinkle mint/parsely on top
  • Add drop of Tobasco for added kick to dressing
