Broccoli salad

My cousin makes the best broccoli salad, this is a slight vegan twist on her delicious (bacon) version


Method

Ingredients

  • Toast pecans and sugar in dry pan on high heat (only c. 40-60 seconds needed) and roughly chop
  • Cut broccoli into small florets
  • Mix broccoli florets, cranberries, pecans and diced red onion in large mixing bowl
  • Pour cashew cream over salad and mix until salad ingredients are evenly coated
  • 1 head of broccoli
  • 1 handful dried cranberries
    • or goji berries
  • 1 handful pecans lightly toasted
    • Pinch of coconut sugar to slightly caramalise
  • 1/2 red onion finely diced
  • Cashew cream
    • Soak 1 handful cashews in water for minimum 2 hours (ideally overnight)
    • Blend soaked cashews with 1 tablespoon (fresh) water, keep adding 1 tablespoon water at a time to get a creamy consistency - not too much you don't want it to be runny
    •  Pinch of salt
    • 1 tablespoon nutritional yeast

Wilde tips

  • Top with Seamore ISea bacon
  • Use walnuts instead of pecans
  • Sprinkle with nutritional yeast and hemp seeds - you won't know it's not parmesan.
