Antioxidant berry salad

I started having this vegan berry salad in summer when the British strawberries were in their prime, but loved it so much it's just as satisfying in the winter months!


Method

Ingredients

  • Toast nuts in dry pan on high heat
    • Add a drizzle of EVOO and the maple syrup for an extra sweet treat
  • Combine all salad ingredients in a bowl
  • Pour dressing ingredients over salad and mix until salad is evenly coated
  • 3-4 handful of green leaves
    • I combine kale and rocket
  • 1 handful blueberries
  • 5-6 strawberries sliced
  • Walnuts/pecans/pine nuts, toasted
    • 1-2 tablespoons maple syrup (optional) to caramalise
  • Dressing
    • 2 tablespoons EVOO
    • Juice from 1/2 lemon
