Steele Breakfast Power Bowl

Not only is this a great way to begin your day, this dish easily allows you to integrate delicious fresh foods and greens right away. I adore sautéed rocket topped with balsamic glaze and sea salt!


Method

Ingredients

  • Heat oven to 180°C
  • Peel and chop sweet potato into small pieces
  • Drizzle EVOO and sprinkle spices over chopped sweet potato and mix with hands
  • Place coated sweet potato on baking tray and cook in over for 20 minutes
  • Pico do Gallo

    • Mix all ingredients in a bowl

  • Plate up rocket with a drizzle of balsamic glaze with pico de gallo

  • Add sliced avocado and couple tablespoons of roasted sweet potato

  • 2 avocados
  • 2 handfuls rocket
  • Drizzle olive oil
  • Balsamic glaze 
  • Sweet potato
    • 1 tablespoon virgin coconut oil/EVOO
    • 1 teaspoon paprika
    • 1/2 teaspoon cumin
    • 1/2 teaspoon turmeric
    • 1/4-1/2 teaspoon sea salt or to taste
  • Pico de Gallo
    • 2 large tomatoes diced
    • 1/2 white onion diced
    • 1 tablespoon fresh coriander
    • sea salt, to taste (recommend Maldon Sea Salt)
    • juice from 1/2 lime

  • Store extra sweet potato in a the fridge and serve with any salad
  • Use butternut squash in place of sweet potato
